I've taken a long break and am wondering if I should make a new account or if I can redo lessons AND assignments. I've tried doing already completed tasks in the past and they don't allow me to attempt them again. Best ways to get back into the swing of things?

First of all: Welcome back, Glenn!
I definitely get your situation: feeling a bit lost, don't know where to start again, and a little frustrated about having forgotten stuff I already knew…
It's a bit of a pity that we can't repeat the tasks here at CodeGym, but I guess it is to prevent "account sharing" or something... so I suggest that you temporarily use other resources to "redo" some of the fundamentals.
Depending on what you want to do / repeat / catchupwith, there are different tools I can recommend (btw, since you're here at CodeGym, I assume that you are somehow fond of interactive online learning, that's why the following are all online resources).
Just two remarks beforehand:
a) You don't have to complete any of the following resources, they are really just there to get you back on track, drop out of those whenever you want. (And you don't have to do all of them at once, of course).
b) Don't get angry at yourself: Using additional resources is definitely never a waste of time. Even if you work through topics you already know, it is always good to get a second perspective that can deepen your understanding.

1. If you just want to get back into writing code and internalising the syntax, because you have forgotten some of the basics and sometimes wonder where those brackets and semicolons should go, I suggest doing the free basic version of the Java course over at Codecademy:
This course will make you code, code, code without much thinking, mostly the tasks are very recipe-like and you just follow them step-by-step to complete them. (roughly like: "Declare an int variable called number and assign the value 7 to it...")
2. If you want to get back into thinking logically and solving problems, try my personal favourite - apart from CodeGym, of course :) - the Java course at hyperskill.com (free with a JetBrains-account. If you already have installed Intellij, you should already have such an account).
Just pick "Java", then chose a Project - any of the easy ones will do, take the one that sounds most appealing to you, I started with the "simple chatty bot" - and you're ready to go. The explanations of the topics are short, concise and (mostly) clear and the tasks are fewer than here at CodeGym. (Most of them are perfectly doable, but a handful of them are real brain-teasers).
3. For a little repetition and some code-along with a nice video-lesson, you can try the first few chapters of the "30 days of code"-challenge over at hackerrank.com. (But beware, the tutorials get more condensed and demanding after a few days and cover topics that you haven't heard about).
